Marmalade
I sometimes feel a little smug after I have managed to get my elderflower cordial made and my sparkling elderflower bottled and brewing away in the shed. I post about it and then my friend Shelley will comment that she has made hers as well but she has also MADE MARMALADE FROM THE LEFTOVER LEMONS. I’m talking about the lemons leftover from the elderflower brewing process. I know it’s not a competition but I definitely think if it was, she would win. Talk about resourceful!
So this year I thought I would make some as well. I do like marmalade and having a piece of toast in the weekend with butter and marmalade is a bit of a treat. Had a hunt through my books to see which recipe to use – I seem to remember mum soaking fruit overnight etc and there were certainly a few of those recipes. But I just went for a straightforward chop the fruit, boil it up and bottle in. I didn’t have enough lemons from the bubbly making process so used some oranges and grapefruit. Just make uhe equivalent out of what you have or what you prefer. Mine has ended up being a mixed fruit marmalade.
So here is the method I used if that helps. It is adapted from one in the Rural Women of New Zealand Cookbook called A Good Harvest.
Mixed Citrus Marmalade
Ingredients
Any combination of citrus fruit you have available.
2 lemons (I used the ones that leftover from the elderflower cordial making process
2 Oranges
2 Grapefruit
5 cups water
2 kilos Sugar
Method.
Slice fruit and chop into small pieces (or the size you prefer)
Pop into food processor and pulse a few times to chop up further.
Put into large saucepan
Add Sugar
Bring to boil stirring to dissolve sugar
Boil rapidly for about 25-20 mins
Bottle into sterilised jars and cap.
